Grilled red Onions filled with Vegetable and white Bean Crema
8 red onions
300gr cooked white beans
1 celery stick
a bit of garlic
native olive oil extra
Clean onions and leave them whole. Cut off the base of the onion, so it remains upright. Poach the onion in saltwater until tender but be careful not to overcook.
In the meantime, cut celery, carrots and onions as finely as possible and lightly sautée the mix in a pan with some olive oil.
Preparing the White Bean Crema
Sautée the garlic with some olive oil and add the white beans with their cooking water. Let the mix cook for some minutes. Blend everything until it becomes a dense cream. Add salt and pepper.
Carve out the cooked and now cool onions carefully from above. Add some of the Crema and then the other vegetables.
Now season the onions with oil, pepper and salt. You can also add some lemon zest.
Cook the onions in the oven until they are soft. Serve warm.
